Why make separate queues for color and B&W ?

I followed the instructions on this site to setup my CP1215 on Mac OS 10.6. It works great, the only problem is the colors don't look totally right. But no big deal.
My question is — why do the instructions say to create separate print queues for color and B&W? I've tried printing black text using the color queue and it seems to work fine. Is there any reason not to do this?

B/W:

$ foo2hp2600-wrapper testpage.ps > xxx; ll xxx
-rw-rw-r-- 1 rick rick 62384 Jun 19 17:37 xxx

Color:
$ foo2hp2600-wrapper -c testpage.ps > xxx; ll xxx
-rw-rw-r-- 1 rick rick 387216 Jun 19 17:38 xxx

I always use the B/W queue if I have a B/W document. Prints faster.
